This month we hosted Australian chef Keith Small, the winner of a scholarship, organized by the Canberra Institute of Technology and the Rotary Club Australia. Kuredu Resort & Spa in conjunction with Crown and Champa Resorts kindly sponsored his accommodation and meals during his time in the Maldives.

Keith was picked from a group of newly qualified chefs for this prestigious prize. He was nominated by his employers and group training teachers based on his work performance and dedication throughout his 4-year apprenticeship. A panel then ultimately selected Keith as the recipient.

Keith works in a restaurant called ‘The Lobby’ in the Australian capital city of Canberra. They specialize in using only local and organic products, including beef and lamb that is raised on Keith’s family’s farm. Keith spent time in the bakery, pastry and hot kitchens to experience how a large resort like Kuredu operates its kitchens. He particularly enjoyed learning new techniques in baking and high volume cooking that he had not been exposed to previously.

This was a fantastic opportunity and life experience for an up-and-coming culinary talent. Keith made many new friends and I wish him all the very best in his future endeavors as a chef.
